超入味红烧土豆鸡块/Chinese Potato Chicken Stew

剩下的汤汁拌饭或者拌红薯粉都香的不行

超级入味的土豆鸡块的做法有几点必须做到。

1,姜片足够多

2,酱料不可以减量,不能忽略

3,必须用啤酒

4,必须用淀粉含量高的土豆

鸡肉腌料/marinate for chicken:
生抽/soy sauce3汤勺/3tbsp

米酒/rice wine1汤勺/1tbsp
蚝油/oyster sauce1汤勺/1tbsp
玉米淀粉/corn starch1汤勺/1tbsp
白胡椒粉/white pepper powder1茶勺/1tsp
盐/salt1茶勺/1tsp
酱料/sauce:
老抽/dark soy sauce2汤勺/2tbsp
蚝油/oyster sauce2汤勺/2tbsp
黄豆酱/soy bean sauce2汤勺/2tbsp
砂糖/caster sugar2汤勺/2tbsp
青岛啤酒/tsingtao beer330ml
盐/salt1茶勺/1tsp
开水/boiled water
其他/others:
辣椒面/chili flake
葱绿/green onion

做法/Instruction

1.首先腌鸡肉,去骨的鸡腿肉切成小块,小块更入味。倒入腌料腌半小时。期间准备佐料,记得姜片多多益善,至少8片。葱白,干辣椒多多益善。接着煮足量的开水备用。将土豆削皮切成小块,为了入味,也为了让土豆在煮的过程中化到汤汁中更加粘稠入味。

first marinate chicken.cut the chicken thigh into small cubes for better flavor.pour in the marinate and marinate for half and hour.meanwhile prepare spices.remember tips:enough ginger,at least 8 slices.enough green onion stalks and dry chili.

then boil enough water,set aside.peel the potato and cut into small cubes for better flavor,also for it will dissolve into soup during cooking.

2.锅中放多一些油,因为佐料比较多。佐料炒到蒜瓣变金黄后倒入腌好的鸡肉块,和佐料一起翻炒后让鸡肉半熟就行。接着倒入土豆,翻炒均匀之后加入啤酒,酱料,和足够多的开水知道没过所有材料。水烧开了之后转中火加盖焖煮半小时。期间偶尔翻动下防止粘锅。

半小时后掀盖加入葱绿转大火收汁到喜欢的程度。汤汁留多一些可以拌饭拌面。

add enough oil in wok,3tbsp is preferred due to good amount of spices.cook until the garlic becomes golden brown,add marinated chicken and mix,cook until chicken is half cooked,add potato,mix well and add beer,sauce,and enough boiled water to cover the materials.

when liquid is boiled,cover the lid and turn the heat down to medium heat,cook for half an hour,stir a little sometimes to prevent burnt bottom.

half an hour later remove the lid,add green onion o reduce the sauce over high heat until liking.save enough sauce so you can pour onto the rice and noodle.
