五花肉/pork belly800g
(买不到也随便挑个prisma里有售的任何一款整块有肥有瘦的猪肉,也不错)
葱/green onion
姜/ginger几片/few slices
花椒/sichuan peppercorn20粒左右/20pcs
八角/star anise
桂皮/cinnimon
香叶/bay leaf
小茴香/cumin seed一小把/half handfull
干辣椒/dry chili
蚝油/oyster sauce1汤勺/1tbsp
生抽/soysauce2汤勺/2tbsp
老抽/dark soy sauce2汤勺/2tbsp
白砂糖/granulated sugar2汤勺/2tbsp

做法/Instruction

1.提前烧足够的开水,温度达到42-45时取一小碗的温水,备用。让水烧开,为煮肉备用。

从一小碗的温水中取一点水,加入酵母,搅拌均匀,倒入面粉里,加入盐,糖,搅拌成絮后分几次加一点点水,直到可以揉成光滑的面团。盖上保鲜膜让它发到一倍大。

等待期间做肉。肉切成大块,放锅中加入冷水和姜片八角香叶,大火烧开,撇去浮沫,煮到再无浮沫为止,倒在滤网中,放一边晾干备用。锅中放比平时烧菜多的油,倒入砂糖,开大火不停搅拌至砂糖完全溶解并开始转黄色的液体的时候就可以下猪肉翻炒上色,不用等到焦糖色,炒的时候也会继续焦糖化,这样的方法适合不耐心的新手。

接着倒入没过猪肉的开水,加入猪肉区所有材料。水再次沸腾后转小火,大概如果电磁炉是9档的话,小火选3档。盖上盖子炖1个小时。如果喜欢,可以加煮熟的鸡蛋。

boil a pot of water in advance,when the heat reach 42-45 celsius,scope a bowl of it,for the dough.then let it boiling,for later.

scoop little of warm water in a bowl,add dry yeast and mix well. then pour it in the flour,and add salt and sugar,stir well,then rub the dough a little,add little bit of warm water several time,each time rub the dough,if it need more water,add more warm water.place the dough on the table and knead until it becomes a smooth dough,place it in the bowl,cover with plastic wrap,let it rise until it doubles the volumn.

while waiting,we can make the pork.cut the pork into few huge chunks.add enough cold water in the pot,add in the pork chunks,along with 2 star anise,2 bayleave,1 cinnimon stick,few ginger slices.turn the heat to high heat,after boiling,keep scoope out and toss the floating dirty impurities,keep boiling until there is no more impurities.drain the pork,for later.

add about 3tbsp of oil in a clean pot,add caster sugar and turn the heat to high heat,keep stirring the sugar,let it dissolve,and when it reach yellow liquid,add the pork,mix the sugar liquid all over the surface of the pork fastly,after the pork is caramelized,pour in the boiling hot water to cover the pork,add the ginger,2 bay leave,2 star anise,1 cinnimon and green onion in the soup,when the water is boiling again,turn the heat down to low heat,cover the lid,let it cook for 1 hour.pe

2.面团发好后,揉成长条,均匀分为8段。每小段用手再揉一遍,接着将每段捏成两端窄,中部宽的纺锤状,用擀面杖干成扁平的长条,从一段向上卷,将大大卷形状的那面竖起立在桌面上,用手掌往下压扁,用擀面杖擀成大概10-13cm的饼。

平底锅大火烧热,将面饼直接放入,煎成金黄色,耐心的可以用中火煎成金黄色,我没耐心,直接大火煎几秒上色就好了。颜色有点深,无所谓。不会有焦味,放心。

然后烤箱预热170度,在烤盘里放张烘焙纸,在纸上放上饼,放入烤箱中层烤10分钟,或者直到你看到馍鼓了一点厚度。

after the dough rises,rub it again,roll into long roll,divide into 8 units,rub each unit again,roll it into american football shape,use rolling pin to flatten it,lift one side then roll it to the other side,flip it up,use ur palm to press it down to a flat round shape,use rolling pin to roll it into about 10-13cm diameter wide round.

warm a clean flat pan,when its hot,place the bread in it,it takes about few seconds to creat the brown grilling color on it,then flip another side,let two sides be colored.then remove it onto a baking sheet which is placed in the baking tray.

pre heat the oven over 170celsius,place the tray in the middle section of the oven,let it bake for 10 mins,or until you can see the bread has thickened a little.

3.肉炖了一个小时后取一大碗的汤汁,接着开盖转大火收汁,收汁收到差不多了,将肉取出来剁成肉碎,接着倒入一个盆里,倒入剁好的肉碎和一大碗汤,搅拌均匀。这样的肉更加入味,不需要舀汤汁倒在夹好肉的馍里,多此一举。

馍烤好后取出,用刀切一半,不要完全切成两半,先往馍的内部抹上香香的辣椒油,再抹上满满的蒜泥,相信我,加入蒜泥好吃升华一个境界。再塞入肉,喜欢的可以在肉中加入青椒碎和香菜,我没买香菜所以没加。不用淋入汤汁,直接开吃,肉已经吸饱了汤汁。

after the meat has cooked for 1 hour,scope a big bowl of soup,set aside.remove the lid,turn the heat to high,reduce the soup.remove the pork to the cutting board,chop it finely,then remove it in a bowl,pour in the soup,mix them well,so the meat will absorb with all the soup.

after the bread is baked,use knife to cut it into half but with one side uncutted,like a taco.scope a spoon of chili oil in the inner side of bread,then scope enough garlic paste and spread it evenly.trust me it will enrich the flavor to higher level!

then fill it bread with juicy pork,i recommand to mix some bell pepper and coriander with the pork!
