欢迎来到圣诞特辑第二篇,芬兰圣诞火腿。每到圣诞前夕,你一定会在超市里看到一排的冷冻柜全部都是大大小小的冰冻火腿,想做做看,给自己吃,给芬兰朋友家人吃,一定会让他们对你刮目相看。when in Rome,我们也入乡随俗做一次吧。

火腿不用买太大的,我买了3kg的,三个人可以吃两餐,真的够了,大家可以自己斟酌。做火腿很简单,只有一步也是最重要的一步,就是等待解冻的时间一定要提前留足,我写了2天就不要等到1天半就想结束解冻开做了,火腿很厚的,里面的温度没有达到要求会导致烤了很久后切到中间会发现肉都没熟,真的是一件很苦逼的事情。

白砂糖/granulated sugar
面包糠/breadcrumbs
Turun sinappi黄芥末酱/Turun sinappi,mustard
装饰和工具/decoration and tools:
丁香/clove
烤箱温度计/oven thermometer
火腿塑料袋/kinkku pussi

做法/Instruction

1.第一步,也是最重要的一步,这步千万按照指示来,不要偷懒,要留足时间。火腿2-3kg要放冰箱解冻2天,4-7kg解冻3天,8-12kg解冻5天。这步如果偷懒,提前拿出来了,最后真是功亏一篑,火腿也很贵,真的要严格按照指示来。如果可以,最好买电子温度计,可以更准确得得知温度变化。

first step,which is also the most important step.you must do as instruction says.do not shorten the time,and leave enough time accordingly,thawing time takes several days.

ham weighs 2-3kg needs to be thawed for 2 whole days,4-7kg needs 3days,8-12kg needs 5 days.

if you shorten the time,you will end up wasting time,money,effort,excitement because you will get a raw ham.

you can buy cheap thormometer or the digital one,digital is more accurate.

也可以用便宜的这种,只要时间严格掌握好,也可以用。我刚开始用的是便宜的这种,后来发现温度和电子测出来的不一样,而且电子的可以在达到你设定的温度之后响起闹铃提醒你。

 

解冻的时候不用把包装袋剪开,直接放在一个盘子上,将温度针插入这块火腿最厚的部位,插到底。然后放入冰箱解冻就好。解冻时间到了之后,再烤之前要拿出冰箱,取掉塑料膜包装,不用取掉网,将火腿放碟子上,在室温下继续解冻5个小时,最后的内部温度要达到10度。

when thawing,you do not need to cut open the sealed bag,just place it on the plate,stick the oven thormometer in the thickest part of the ham,stick to the bottom of the thermometer,and let it thaw in fridge.

when the thawing time finish,bring the ham out from the fridge,remove the plastic wrap, do not remove the net,let the ham sit in the room temperature for 5 hours.when we reach 5 hours,the inner temperature should be 10 celsius degree.

有个小窍门,如果按照解冻需要的时间做了之后温度还没升到10度,可以拆开塑料包装,放入烤箱中层40-50度加速解冻到10度就好了。这是不得已而为,不要偷懒。

and there is one trick,if you strictly follow the thawing time,the inner temperature still do not reach 10 celsius degree,you can remove the sealed plastic bag and place the ham in the middle of the oven,use 50 celsius heat to reach the goal.

but this trick is only for emergency,only do it when you did follow the thawing time.

2.将插着温度针的火腿放入火腿专用塑料袋里,不要拆掉包裹着火腿的网,这个是维持火腿形状的。系紧开口处,然后在袋子顶端剪开一个小口通热气。烤箱预热125摄氏度后,将装着火腿的烤盘放入中层,烤3个小时。1kg火腿需要烤1个小时,3kg就要3个小时。

keep the thermometer in,place the ham in the ham bag,do not remove the net from the ham,the net is to keep the ham in shape.

close the bag,and cut a small hole on the top of the bag so the hot air will run out of the bag during baking.

preheat the oven over 125 celsius,place the tray in the middle of the oven,bake for 3 hours.1kg ham takes 1 hour to bake,3kg needs 3 hours.

3.三个小时后,火腿的内部温度要达到75度,看下温度计,达到75度了就可以把火腿拿出来。剪开塑料袋,袋子里的火腿汤可以用来做gravy,看你喜欢。把火腿两端的网结剪开后,用小刀切去猪皮,扔掉不用,然后切掉脂肪。再将剩下的网都撕掉扔掉。

after 3 hours,the temperature should reach 75 celsius,when you see the thermometer shows 75 celsius,you can take the ham out.carefully remove the plastic wrap,if you wanna use the ham juice to make gravy for white sauce for potato that will be nice.

then cut off the net knot on both sides,then use knife to remove the skin from the ham,trim off the fat as well.then tear off all the net on the ham.

4.将干净的火腿放在烘焙纸上,均匀充分得涂抹上黄芥末酱,涂多点,涂得厚厚的,再均匀洒上充分的面包糠,也是厚厚的一层。然后用餐刀将厚厚的表面划出菠萝包的风格,在每个格子里插入一个丁香做装饰。

然后烤箱预热250度,将火腿放入中层烤15分钟即可。

拍完照在吃之前要把丁香全部去掉不要,不然吃到很苦的。

吃的时候可以再在火腿切片上抹上黄芥末酱,火腿本身的味道就有咸味了,所以不用加其他调料了,一点额外的芥末酱就可以了。

place the clean ham on the baking paper in the tray,mop the surface fully and evenly with mustard,mop enough.then sprinkle enough breadcrumbs on the surface,also sprinkle enough of it.

then use table knife to creat the pineapple shape on the surface,in each cube,stick one clove in it as decoration.

pre heat the oven over 250 celsius degree,place the ham back into the oven for 15 mins.

after that,bring out and take a photo,before you eat,be sure to remove all the cloves from the ham,you do not wanna taste that bitterness.
