很简单,鸡汤宝,味增膏,喜欢的配料,一点点盐。味道很浓厚很鲜。乌冬面用的是已经煮好的真空包装鲜乌冬面,省去煮面条的步骤。

this version is simplified lazy version,but yumminess is not reduced~

ingredient is very simple,chicken stock,white miso paste,veggie or meat you like,a pinch of salt.

i used the vacuum packed ,cooked,fresh udon noodle,so we can skip the step of making or boiling the noodle.

用料/Ingredient

腌好的鸡肉/marinated chicken300g
鲜乌冬面/cooked udon noodle400g
鸡汤宝/chicken bouillon1块/1pc
白味增膏/white miso paste5茶勺/5tsp
盐/salt一点点/a pinch
香菇/shiitake mushroom3个/3pc
青菜/pakchoi1-2株/1-2pcs
葱/green onion
蒜/garlic,minced1瓣/1glove
姜泥/ginger paste一点点/tiny amount
海苔/nori可选/optional
水/water1300ml

做法/Instruction

1.把所有材料切好准备好。按照图上的样子切。葱白部分切成段一会煮汤的时候放汤里增加味道。没有姜泥的可以用新鲜的姜,切成段一会炒香之后挑出来扔掉就好。不要放太多,姜泥小拇指第一节的量就可以了。香菇用热水泡软切片,跟我一样心急的可以不用完全软,切片之后放汤里一起煮可以很快软掉,还可以增加汤的鲜味。

锅中放油,大火加热后加入腌好的鸡肉炒熟之后盛出备用。

cut the ingredient like showed in picture below.cut the green onion stalk roughly,we use them to add the flavor in the soup.if you dont have ginger paste, just use fresh ginger,1 thin slice is enough,you can pick it out and toss it after we use the hot oil to bring out the fragrancy.

if you have ginger paste,just use a pinch,as much as the first index of your pinky finger.soak the shiitake mushroom in hot water to hydrate and soft it then slice them.if you are impatient type as me,when its halfly softened,squeeze the water out of the shiitake mushroom,slice them and add in the soup later to cook with,it will become fully hydrated and softened fast anyway.

ok after everything is prepare,add some oil in the pan,heat it over high heat,add marinated chicken in it,when its cooked,pour it in the plate for later.

2.不用换锅,不用洗锅,直接再加一点油,加入蒜姜泥葱白炒香,倒入清水加入味增膏和鸡汤宝,加入半软的香菇搅拌几下,煮开后盖上锅盖焖3分钟,然后取出葱白不要,尝尝咸淡,不够的加一点盐。这样汤底就做好了。

加入青菜烫个半分钟。将乌冬面放在碗里,倒入汤底,用筷子把乌冬面分散后,加入香菇,青菜,葱绿,海苔丝,和熟鸡肉。开吃!

you dont need to change a new pan,and not even wash this pan,just add little bit of oil,add minced ginger garlic and green onion stalks,cook until fragrant.add in water,miso paste,chicken bouillon,and halfly softened shiitake mushroom,mix well,when boiled,put the lid on and let it boil for 3 mins.

after that,toss the green onion stalks,add salt to taste.now broth is ready.

add pak choi,cook for half min.add udon noodle in the bowl,pour in the broth,use chopstick to seperate the noodle from sticking to each other,add shiitake mushroom,pakchoi,green onion,nori slices,and chicken.

serve!
