芬兰人爱喝的低酒精浓度饮料,需要够大的容器,红糖,白糖,酵母,柠檬,葡萄干。

下次vappu的时候可以试试,一起感受下节日的气息。

用料/Ingredient

鲜酵母/fresh yeast豌豆大小一粒/one pea size
白砂糖/granulated sugar250g
红糖/brown sugar250g
水/water4L
柠檬/lemon2个/2pcs
葡萄干/raisin6粒/6pcs

容器选可以装4升水的,最好是透明的,因为需要观察葡萄干有没有浮起,浮了就可以喝了。我用的容器是在K Citymarket买的。我做了8升所以买了俩。这个饮料需要1天初步发酵和大概两三天完成发酵的时间。之后再喝需要放在冰箱里,可以保存1周。

做法/Instruction

1.大祸中烧一半的水也就是2L的水,加入全部白砂糖和红糖, 糖全部融化之后关火,准备2L的凉水,倒入烧开了的热水中为了降低温度,挤两个柠檬的汁(皮不要扔掉)加入水中。放凉到42-45度后舀出一大勺水放在小碗里,加入豌豆大小的一粒鲜酵母,搅拌至融化之后倒回锅中。搅拌均匀。加入一些柠檬皮,盖上锅盖放在室内用室温让它先初步发酵1天

boil 2L of water,and add all the granulated sugar and brown sugar,let it dissolve,turn off the heat,remove the pot from the heat.add 2L of cool water in the hot water to cool off,squeeze two lemon juice in the water,leave the lemon peel for later.

when the water is cool down to 42-45 celsius,scoope a bowl of water,pinch one pea sized fresh yeast and add into the bowl,stir to dissolve.pour it back to the pot water,stir evenly.add some lemon peels,cover the pot with lid then place it in room temperature for one day.

2.一天后,在容器里加入1茶勺的白砂糖,6粒葡萄干,sima中的柠檬取出不要,倒入sima,拧上瓶盖,但是不要太紧,发酵会产生气压,等发酵完之后可以拧紧。放在室温发酵到全部的葡萄干浮起到水面就可以喝了。

味道是红糖柠檬加清淡的啤酒味。

after 1 day,add 1 tsp of sugar in the glass container,add 6 raisins too,toss the lemon peel out of the sima,pour the sima in the container,seal the container but do not seal tightly,fermentation will produce air pressure,we can seal tightly after fermentation is finished.

place the container in room temperature until the raisins are all floated on the surface,which is about 2-3days.

refridge the sima in fridge,finish sima within 1 week.
