北欧甜点杏仁膏奶油圆面包/Laskiaispulla

 小圆面包是北欧国家的传统甜点,很久以前仅仅就是一块圆圆的小面包而已,在后来才有了加入果酱,奶油,杏仁膏的吃法。

芬兰人在忏悔星期二这天吃小圆面包(2020年是2月25日,已经过去了),在芬兰,传统馅料是草莓酱和奶油,在瑞典是加奶油和杏仁膏。我两种都做了,试下来觉得瑞典的做法更好吃,杏仁膏软糯的口感和甜滋滋的味道更胜一筹。所以我只发瑞典版本的。

下面的做法会提到如何加馅,这里先说明下,小圆面包的底部中间扣除部分面包挖个坑,但是扣除部分不要浪费,要放进搅匀的杏仁膏中进一步搅匀,然后将杏仁膏和面包的混合物放入坑内,用勺子填平即可。

我的瑞典版本做法是我老公教我的,每家做法可能都有些不同,但是最终的口味几乎都是一致的美味。

Laskiaispulla is a traditional nordic dessert which they eat on Shrove Tuesday,in Finland they also drink beansoup,and the stuffing in laskiaispulla usually contains strawberry jam,whipped cream,with almond slices on the bun.But my version of this dessert is Swedish style,it contains almond paste and whipped cream.i add strawberry for extra.

personally i perfer Swedish stuffing than Finnish one,i tried both.So this recipe,im using almond paste.

and my recipe is more simple homemade version.

用料/Ingredient

面团/dough:
通用面粉/all purpose flour900ml
42-45度温牛奶/42-45celsius warm milk300g
干酵母/dry yeast15g
白砂糖/granulated sugar100g
肉蔻粉/Cardamom powder2茶勺/2tsp
盐/salt1茶勺/1tsp
鸡蛋液/egg,beaten1个/1pc
填馅/stuffing:
杏仁膏/almond paste150g
水/water1汤勺/1tbsp
鲜奶油/whipped cream200ml
糖/granulated sugar30g
草莓/strawberry可不选/optional
杏仁片/almond slices可不选/optional

做法/Instruction

1.牛奶烧热到42-45度就停火,加入酵母和糖和盐,搅拌均匀,在盆里加入面粉后,倒入牛奶,小豆蔻粉,用电动搅拌器换上揉面头,揉到面团光滑均匀。盖上布醒半小时。

warm the milk to 42-45 celsius,add yeast,sugar,salt until combined and melted.add flour in the mixing bowl,pour in the milk,add cardamom powder.knit the dough with electric dough mixer,until the dough is smooth.cover the bowl with cloth let it rise for half hour.

2.取个盆,加入鲜奶油,加入一半白砂糖打发一会,再加入剩下的白砂糖,打发到硬性发泡,就是奶油状。放一边备用。草莓洗干净后切去叶子,纵向切四片。备用。杏仁膏用切片器切碎,易于搅拌,加入1汤勺水就好,搅拌到糊状。备用。

take a bowl,add whipped cream,add half portion of sugar and beat until cream starts to shape,add the rest of portion keep mixing until the cream turns stiff.wash the strawberry,cut off the leaves,cut into four pieces lengthwise,save for later.

zest the almond paste,add 1 tbsp water,stir and mix until mixture turns to porridge texture.

3.半小时过后,手上洒一些面粉,取70克一份的面团,在桌面也洒些面粉,在桌面上用掌心揉搓到圆球状。设置烤箱200摄氏度预热,再继续揉接下来的面团。在烤盘上加烘焙纸,将揉好的面团球均匀分布在烘焙纸上,大概可以做13个。将烤盘放入烤箱烤7分钟,拿出来均匀在表面刷上鸡蛋液,这时候如果你想加杏仁片,可以在这一步加。然后放回烤箱继续烤8分钟。

after half hour,sprinkle some flour on your hand,and on the platform.take 70g per pc of dough,place it on the platform,rub the dough with your palm until its a ball shape.pre heat the oven over 200 celsius now,then continue rubbing other dough balls.

add baking paper on the baking sheet,place the dough ball evenly on the paper,you can make around 13 pcs.place the sheet in the oven for 7 mins.take the sheet out,beat one egg,brush the egg liquid on the top surface,you can add some almond slices on top too if you want.

place it back to oven for 8mins.

4.面团烤好后稍微放凉一些,将面包横切为二,底部中间扣除部分面包挖个坑,但是扣除部分不要浪费,要放进搅匀的杏仁膏中进一步搅匀,然后将杏仁膏和面包的混合物放入坑内,用勺子填平。再往上加一大勺奶油,再加3片草莓,盖上面包头部,稍微往下压一下让奶油均匀分摊开来。最后在面包上筛入糖粉。开吃!

after the dough is baked,let if cool for a while,until its comfortable to hold in your hand.then cut the bread horizontally into two.dig a hole from the bottom piece, but do not toss it.add it in the well-mixed almond paste and mix it evenly, then put the mixture of almond paste and bread into the pit and fill it with a spoon .

Add a tablespoon of cream to the top, add 3 slices of strawberries, cover them with the other half of the bread, and press down slightly to spread the cream evenly. Finally, sift the powdered sugar on the bread. Serve!
