夏日奶酪蛋糕/Summer Cheesecake

柠檬,奶酪,奥利奥,莓果,椰蓉…

这款蛋糕以奥利奥椰蓉柠檬皮打底,光这个底就可以另外当甜点吃了,柠檬味中和了奥利奥的甜腻,椰蓉增加了有趣的口感和椰香。蛋糕本体在冰箱里放凝固之后是凉爽爽滑的酸奶口感,蓝莓和树莓的酸味被清甜的蛋糕裹住一起吃相辅相成。柠檬香草和迷迭香做装饰,增加绿色的香气。现在还只是4月底,但是吃了这个夏天一定会更快到来的吧~

This cake is made of Oreo,coconut flake and lemon zest. The base itself is yummy enough to be another dessert. The lemon flavor neutralizes Oreo ’s sweetness, and the coconut flake adds an interesting chew and coconut flavor. After the cheesecake filling being set in the refrigerator, it presents a cool and smooth yogurty cheesy texture. The sour taste from blueberries and raspberries is wrapped by cake’s sweetness ,sour and sweet,and juicy.Lemon balm and rosemary garnish is to add a green aroma. It’s only the end of April, but if you try this, i bet the most beautiful Finnish summer will arrive much sooner.

用料/Ingredient

饼干底/base:
去掉夹心的奥利奥/oreo without cream layer150g
椰蓉/coconut flake60g
不含盐黄油/unsalted butter80g
柠檬皮屑/lemon zest1颗柠檬/1 lemon
山桑子果酱/bilberry jam:
山桑子/bilberry150g
白砂糖/granulated sugar50g
柠檬汁/lemon juice2汤勺/2tbsp
奶酪蛋糕/cheesecake filling:
奶油奶酪/cream cheese400g
白砂糖/granulated sugar200g
柠檬汁/lemon juice1.5汤勺/1.5tbsp
无味大豆酸奶/unsweetened soy yogurt300g
通用面粉/all purpose flour3汤勺/3tbsp
香草浓缩液/vanilla extract1茶勺/1tsp
鸡蛋/egg3个/3pcs

做法/Instruction

1.先做饼干底。黄油放碗里隔水融化,奥利奥去掉夹心后(按照下图的手法可以去得比较好,快)放塑封袋里,用擀面杖擀碎,越细越好,还有一小部分擀不细的没关系,不用太完美。握着整个柠檬放在刮丝刀上刮下柠檬皮屑。准备个碗,加入融化的黄油,将饼干底所需的材料全部混一起搅拌均匀。

we make base first.melt the butter first.remove the cream layer from the oreo(you can remove like this from picture below,its easier and faster.),add only biscuit in the sealed bag,roll them and break into fine powder texture with rolling pin.its ok to have some bigger crumbs.

bring a bowl,zest a whole lemon in the bowl,add butter and mix other materials well.

 

2.准备个20厘米的可拆卸蛋糕模具,在底部和内部圆径上刷上一点黄油,裁剪烘焙纸,贴在模具内部。将奥利奥混合物倒在模具里,用勺子压平压紧。放入冷冻室冻30分钟。

prepare a 20cm diameters cake mould,brush little bit of butter on the inner side and bottom,trim the baking paper into right sizes and stick them on the side and bottom.

add mixture into the mould,press the base until flat and tight with a spoon.place the mould in freezer for 30 mins.

3.这一步做果酱。切开柠檬,挤出所有柠檬汁放在小碟子里备用。准备小锅,开中火,锅中加入山桑子,可以用冰冻包装的,加入糖和2汤勺柠檬汁,期间多次搅拌,多次用铲子碾碎山桑子果,汁水起泡之后继续烧到浓稠。倒入小碟子里放冰箱里冷藏降温。

this step,we make jam.cut the lemon in half,squeeze the juice in a bowl.heat a small pot over medium heat,add bilberry,you can use the frozen bilberry.add water and 2tbsp of lemon juice,mix them well in the pot,mash the berry during the process.

after it starts bubbling,keep cooking until thickens.pour it in a bowl,place in fridge to cool off.

4.这一步做奶酪蛋糕。我们先预热烤箱140摄氏度。用手动搅拌器把奶油奶酪低速打到顺滑,加入除了鸡蛋之外的所有这一步所需的所有材料,面粉要筛入,继续低速打到顺滑。鸡蛋在独立的碗里的打散后倒入面糊里翻拌均匀。

we make cheesecake filling.but before that,pre heat the oven over 140 celsius.blend the creamcheese under lowest speed until creamy,add all materials except for the egg, sift in flour,blend them until smooth.beat the egg in another bowl,and pour it in the batter,fold them well.

5.把面糊倒入模具里,晃动模具直到表面平整,用勺子舀蓝莓酱倒在表面均匀分布成几个圆,用抹刀勾勒出自己喜欢的样子,结束后再摇晃几下。放在预热好的烤箱里中层,烤60分钟。或者表面凝固但是晃动的时候可以感觉到内部还在晃动的状态。

放室温冷却后放冰箱8个小时以上就可以吃了。吃之前可以加蓝莓,树莓,柠檬香草,迷迭香做装饰。

注意:拆模具前,先用抹刀把烘焙纸和模具之间紧贴的状态疏松开,不然蛋糕会裂口。

add the batter in the mould,shake the mould until the batter is flatten on the surface.add the jam on surface in a round shape with a spoon,use spatula to make swirls.shake the mould again.place in the middle layer of oven,bake for 60mins.or until the surface is set but you can feel the inner is still little wobbly. 

place the mould in room temperature to cool off, then switch to fridge,let it set for 8 hours at least.before serve,you can garnish with berries,lemon balm,rosemary.

NOTE:use spatula to carefully to creat the gap between baking paper and mould’s inner side before remove the mold,otherwise the cake will crack.
